Creamy Ontario feta cheese, cool watermelon and grilled peppers are bathed in a fragrant spiced oil for a great taste of summer flavours.
Preheat grill to medium-high and grease grates well. Toss shishitos with 1 tbsp (15 mL) olive oil. Grill for 5 to 7 minutes or until tender and blistered.
Meanwhile, in a small pot set over medium heat, warm remaining olive oil with coriander seeds, pepper and oregano for 2 to 4 minutes or until fragrant.
On a large platter, arrange watermelon and grilled shishitos. Top with feta. Drizzle oil over top, then sprinkle with flaked salt.
