Preheat the oven to 400°F. In a food processor add flour, butter, cheddar, salt and cayenne pepper. Pulse until the mixture is crumbly. Add ice-cold water and pulse until a dough ball forms.
Place plastic wrap on your kitchen counter and place the dough ball in the centre. Lightly flatten the dough and cover with plastic wrap. Place into the freezer to chill.
Apple Filling: Peel, core and slice the apples and add into a large mixing bowl. Mix in all the apple pie filling ingredients and set aside.
Crumble: In a large mixing bowl, add all the ingredients and hand mix until a crumbly texture is formed.
Assemble: Remove the dough from the freezer and place on the counter. Using a rolling pin, roll the dough out to a 12- inch diameter.
