Step 1
Place a loaf pan in the freezer.
Step 2
In a blender, add cottage cheese, honey and vanilla extract. Blend until smooth.
Step 3
Add 1 ½ cup of mixed berries and pulse a few times so they’re incorporated but not completely blended.
Step 4
Remove the loaf pan from the freezer and pour the cottage cheese mixture in. Top with the remaining berries, and freeze for 4 hours or overnight.
Step 5
Once ready to serve, let rest at room temperature for 5 to 10 minutes, until easy to scoop.
