Dress to Impress Root Vegetable Gratin

    Preheat oven to 400ËšF. Grease a cast iron skillet with butter and set aside.
  2. Step
    Slice sweet potato, parsnips and beets into very thin rounds using a mandoline and transfer each vegetable to its own bowl.

    Pour cream over each vegetable until submerged. Top each bowl of sliced vegetables with salt and pepper, 1 cup grated parmesan and minced thyme. Toss together until all vegetable slices are well coated.

    Pour remaining ¼ cup cream into the bottom of a baking dish (the cast iron skillet).
  5. Step
    Line the baking dish with lines of vegetables going from smallest on the outsides to largest in the middle. Season top of gratin with salt, pepper and sprinkle local mozzarella cheese. Cover with foil and bake for 30 minutes or until vegetables are soft. Once ready, serve while warm.
