    Grease a 9x13-inch casserole dish with butter.

    In a large bowl, whisk together milk, yogurt, maple syrup, eggs, cinnamon and vanilla extract until smooth. Set aside.

    Add the cubed bread and frozen strawberry rhubarb mix to the dish and distribute evenly.

    Pour the milk mixture over the bread and fruit, ensuring everything is well coated.

    Let stand for 30 min at room temperature or cover and refrigerate for at least 2 hours or overnight.

    Preheat oven to 350°F.

    Bake uncovered for 55–60 minutes or until the custard is set and the top is lightly golden.

    In a chilled bowl, whip the cream and the vanilla extract until soft peaks form.

TIP:

Use day-old bread for the custard bake. It soaks up the milk mixture and has more of a structured texture.
