    Preheat the oven to 400°F.

    Peel the carrots and cut them in half lengthwise. In a small bowl, add melted butter, cumin, paprika and ½ the salt and pepper. In a lined cooking tray, add the carrots and coat with the butter mixture. Cook for 30 minutes or until tender.

    In the meantime, in a food processor, whip ricotta until light and fluffy, about 2 minutes on high. Add parmesan, lemon zest and juice and the rest of the salt and pepper. Whip for another 30 seconds.
