Ingredients

Instructions

  1. Step
    Heat a large pot of boiling water and salt it. Cook pasta according to instructions until aldenté. Drain pasta and reserve about ½ cup of the liquid into a bowl.
  2. Step
    In a small frying pan, add spinach and stir until slightly wilted.
  3. Step
    In a medium bowl, combine ricotta, olive oil, parmesan cheese, garlic, lemon zest and juice. Season with salt and pepper.
  4. Step
    Using the same pot in Step 1, mix together the ricotta mixture and cooked pasta. Mix in the spinach while slowly drizzling in the reserved pasta water. Continue mixing until the pasta is well combined. Garnish with parmesan cheese, parsley and serve.
