Instructions
- StepIn a small bowl, whisk together sour cream, honey, sriracha, soy sauce, and garlic. Set aside to let the flavours develop.
- StepIn a large bowl, whisk together melted Ontario butter, apple cider vinegar, basil, parsley, oregano, thyme, lemon zest, salt, and black pepper.
- StepAdd the halloumi (or bocconcini/paneer) cubes and vegetables to the bowl, tossing to coat. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).
- StepIf using wooden skewers, soak them in water for at least 10 minutes to prevent burning.
- StepThread the marinated halloumi (or bocconcini/paneer), zucchini, eggplant, peppers, and red onion onto the skewers, alternating ingredients for even distribution.
- StepPreheat the grill to medium heat and grease the grates with a little melted butter.
- StepPlace the skewers on the grill and cook for 8-10 minutes, rotating every few minutes and basting occasionally with any leftover marinade. Grill until the cheese is golden and slightly charred and the vegetables are tender.
- StepTransfer the skewers to a platter and drizzle with the honey sriracha sauce. Serve hot and enjoy!
