Instructions

  1. Step
In a small bowl, whisk together sour cream, honey, sriracha, soy sauce, and garlic. Set aside to let the flavours develop.
  2. Step
In a large bowl, whisk together melted Ontario butter, apple cider vinegar, basil, parsley, oregano, thyme, lemon zest, salt, and black pepper.
  3. Step
Add the halloumi (or bocconcini/paneer) cubes and vegetables to the bowl, tossing to coat. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).
  4. Step
If using wooden skewers, soak them in water for at least 10 minutes to prevent burning.
  5. Step
Thread the marinated halloumi (or bocconcini/paneer), zucchini, eggplant, peppers, and red onion onto the skewers, alternating ingredients for even distribution.
  6. Step
Preheat the grill to medium heat and grease the grates with a little melted butter.
  7. Step
Place the skewers on the grill and cook for 8-10 minutes, rotating every few minutes and basting occasionally with any leftover marinade. Grill until the cheese is golden and slightly charred and the vegetables are tender.
  8. Step
Transfer the skewers to a platter and drizzle with the honey sriracha sauce. Serve hot and enjoy!
