In a small saucepan add red wine vinegar and shallots. Let cook on medium until shallots absorb the flavour. Set aside to cool.
Using a spatula, fold all ingredients together in a mixing bowl until evenly combined. Transfer mixture to plastic wrap and shape into a log, twisting the ends to close. Refrigerate and serve alongside steak.
