    Preheat oven to 350°F (180°C).
  2. Step
    Brush large (10-inch/25 cm) cast-iron skillet with 1 - 2 tbsp butter.
  3. Step
    In medium bowl, whisk together flour, cocoa powder, baking soda and salt.
  4. Step
    In large bowl, stir together remaining butter, brown sugar and granulated sugar until blended. Stir in egg, buttermilk, red food colouring and vanilla until blended.

    Stir in flour mixture until combined. Stir in half the white chocolate chips. Spread batter into prepared skillet; sprinkle with remaining white chocolate chips.

    Bake cookie skillet for 22 to 25 minutes or until edges are golden and tops are set (let stand for 10 minutes before serving).

    Meanwhile, in small skillet set over low heat, heat chocolate chips, buttermilk, vanilla and salt, stirring occasionally, for 2 to 3 minutes or until smooth and melted.
