S’mores Ice Cream Sandwich

Celebrate National Ice Cream Sandwich Day with a nostalgic summer twist. Stacked with gooey marshmallow, rich chocolate, and a scoop of locally made ice cream from right here in Ontario, these S'mores are perfect for backyard nights and little hands!

    Line a 9×13-inch baking dish with parchment, leaving extra over the sides for easy lifting.
  2. Step
    In a bowl, whisk pudding mix with cold milk until smooth. Fold in 1 cup whipped topping. Set aside.

    Arrange half of the chocolate graham crackers on the bottom of the pan. Spread pudding mixture on top and chill for 10–15 minutes.

    In a separate bowl, beat cream cheese and marshmallow creme until fluffy. Fold in the remaining whipped topping and mini chocolate chips.
  5. Step
    Gently spread this mixture over the pudding layer. Top with remaining graham crackers, pressing slightly.
  6. Step
    Cover and freeze for 6 hours or until firm.
  7. Step
    Lift from the pan using the parchment. Slice into squares using the cracker lines as a guide. Sprinkle with flaky salt if using, and let sit at room temperature for 10–15 minutes before enjoying.
