Instructions

  1. Step
Preheat oven to 175°C (350°F). Line a 9×9-inch pan with parchment paper, leaving an overhang for easy removal.
  2. Step
Mix crushed graham crackers with melted butter and press firmly into the bottom of the pan to create an even layer.
  3. Step
In a saucepan over medium heat, melt the butter. Remove from heat and whisk in brown sugar and granulated sugar. Let cool slightly.
  4. Step
Beat eggs and vanilla into the butter mixture. Sift in cocoa powder and stir until combined.
  5. Step
Gently fold in flour, baking soda, and salt until just combined. Stir in chopped chocolate.
  6. Step
Pour the batter over the graham cracker crust and spread evenly. Bake for 28–30 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Step
Remove from oven and immediately place marshmallows on top in even rows. Return the pan to the oven and broil for 15–30 seconds, or until the tops are golden brown. Watch closely to prevent burning.
  8. Step
Allow the brownies to cool for at least 30 minutes before slicing into bars. Enjoy warm or at room temperature!
