    In an air fryer at 350ºF, add tomatoes, 2 tbsp of butter and red onion, cook for 15 mins. Shake the basket once mid way through.

    In the meantime, in a large pan over medium-high heat, add the remaining butter and melt. Add bread slices and toast until golden, approximately 2 minutes on each side.

    In a small bowl combine cottage cheese, chopped basil and lemon zest.
  4. Step
    To assemble the toast, spoon cottage cheese onto each slice, top with cherry tomatoes, onions, and season with salt and pepper. Sprinkle with crumbled feta.
