Enjoy a different take on the traditional loaded toast recipe. Topped with roasted cherry tomatoes, caramelized red onion, and creamy cottage cheese infused with basil and lemon zest, it's a simple dish filled with flavour and nutrients.

- StepIn an air fryer at 350ºF, add tomatoes, 2 tbsp of butter and red onion, cook for 15 mins. Shake the basket once mid way through.
- StepIn the meantime, in a large pan over medium-high heat, add the remaining butter and melt. Add bread slices and toast until golden, approximately 2 minutes on each side.
- StepIn a small bowl combine cottage cheese, chopped basil and lemon zest.
- StepTo assemble the toast, spoon cottage cheese onto each slice, top with cherry tomatoes, onions, and season with salt and pepper. Sprinkle with crumbled feta.
