Lunchbox Pizza Muffins

    Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup. ​

    In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and garlic powder. ​

    In a separate bowl, whisk together the eggs, milk, melted butter and tomato paste until smooth. ​
  4. Step
    Add the wet ingredients to the dry ingredients and stir just until combined. ​
  5. Step
    Fold in the mozzarella cheese, cheddar cheese, pepperoni, red bell pepper and basil. ​
  6. Step
    Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full. ​
  7. Step
    Sprinkle the tops with the remaining mozzarella cheese, Parmesan cheese and Italian seasoning. ​
  8. Step
    Bake for 20–25 minutes, or until the muffins are golden brown and a toothpick inserted into the centre comes out clean. ​
  9. Step
    Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm or allow them to cool completely before packing into lunchboxes.​
