Lunchbox Pizza Muffins
These savoury pizza muffins pack classic pizza flavour and gooey cheese from right here in Ontario into an easy, lunchbox-friendly bite. Make a batch ahead for school lunches, after-school snacks or busy weekdays when something cheesy and satisfying is exactly what’s needed.

- StepPreheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup.
- StepIn a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and garlic powder.
- StepIn a separate bowl, whisk together the eggs, milk, melted butter and tomato paste until smooth.
- StepAdd the wet ingredients to the dry ingredients and stir just until combined.
- StepFold in the mozzarella cheese, cheddar cheese, pepperoni, red bell pepper and basil.
- StepDivide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
- StepSprinkle the tops with the remaining mozzarella cheese, Parmesan cheese and Italian seasoning.
- StepBake for 20–25 minutes, or until the muffins are golden brown and a toothpick inserted into the centre comes out clean.
- StepLet the muffins cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm or allow them to cool completely before packing into lunchboxes.
