Chicken Shawarma Crispy Rice Salad
This shawarma-inspired crispy rice salad layers deeply spiced chicken, crunchy golden rice and a creamy herbed yogurt dressing made with dairy from right here in Ontario. Fresh, filling and packed with flavour and texture, it’s an easy late-summer meal that proves a great salad starts with the dressing.

Instructions
- StepToss the rice with the melted butter, paprika and salt. Spread on a parchment-lined baking sheet and bake at 425°F (220°C) for 30–35 minutes, stirring halfway, until crispy.
- StepSeason the chicken with the turmeric, cumin, cinnamon, garlic powder and black pepper. Cook in the butter over medium-high heat for 8–10 minutes, until golden and cooked through.
- StepWhisk together the Greek yogurt, tahini, lemon juice, garlic, salt and optional honey or maple syrup. Add 1–2 tsp (5–10 mL) of water if needed to thin the dressing.
- StepCombine the cucumbers, tomatoes, onion, pickles, cilantro, crispy rice and warm chicken. Drizzle with the dressing and toss gently to coat.
- StepServe immediately while the rice is still crispy.
