Instructions
- StepIn a medium bowl, prepare the marinade by whisking together the olive oil, white wine vinegar, diced pimentos, parsley, green onions, garlic, sugar, dried basil, salt, and black pepper until well combined.
- StepCut the cheddar cheese and chilled cream cheese into thin, even slices, approximately ¼ inch (6 mm) thick. For easier slicing, place the cream cheese in the freezer for 15–20 minutes beforehand.
- StepArrange the cheese in a shallow serving dish, arrange the cheese slices upright, alternating between Cheddar and cream cheese to create a beautiful layered presentation.
- StepPour the prepared marinade evenly over the cheese, making sure the herbs, garlic, and pimentos are distributed throughout.
- StepCover tightly with plastic wrap and refrigerate for at least 8 hours or overnight to allow the flavours to develop.
- StepRemove from the refrigerator approximately 15–20 minutes before serving. Spoon some of the marinade over the cheese and garnish with additional parsley, if desired.
- StepServe chilled or slightly softened with crackers, crostini, or toasted baguette slices.
