FOR THE CRUST:

  1. Step
    Line a 9 x 9 square baking pan with parchment paper (use enough paper that the edges are sticking out and can be used to lift the pie fudge out of the pan) and set aside.
  2. Step
    a large bowl, add white chocolate, Ontario condensed milk and salt. Microwave at 30 second intervals until chocolate is melted and smooth, stir at each interval. Add key lime juice and key lime zest into the same bowl and mix. Set aside.
  3. Step
    In a medium-sized bowl, add melted butter, graham cracker crumbs and sugar. Once a crumble starts to form, spoon graham cracker crumbs into the baking pan from Step 1, gently press down to smoothen out the crust.
  4. Step
    Transfer mixture onto the crust and smooth out the mixture evenly. Cover and refrigerate for about 2 hours or until mixture and crust have set.
  5. Step
    Remove cover and life pie fudge from the tray and place on top of a cutting board. Using a knife slice the fudge into bite size squares. Top with whipped cream and garnish with key lime zest.
