- StepPreheat the oven to 350°F.
- StepIn a small pan, add butter and sauté chopped vegetables until tender, about 6 minutes.
- StepIn a small bowl add the Greek yogurt. Very slowly, add the milk and whisk until completely incorporated.
- StepIn a large bowl, whisk the eggs and the yogurt mixture. Season with salt and pepper.
- StepAdd cooked vegetables and half of the cheese, mix until combined.
- StepPour the quiche mixture into a buttered 9 inch pie dish. Top with remaining cheese and bake for 35-45 minutes or until the quiche has set.
