Cheesy Beef Pockets​

    Preheat the oven to 400°F (200°C). Heat a large skillet over medium-high heat and melt 2 tablespoons butter. Add the ground beef and cook for 5–6 minutes, breaking it apart with a spoon until browned. Add the diced onion and red bell pepper and cook for 4–5 minutes, stirring occasionally, until softened. Stir in the minced garlic and cook for 30 seconds, until fragrant. Add the tomato paste, garlic powder, smoked paprika, chili powder, red chili flakes, black pepper, cumin and salt. Stir until the beef is evenly coated. Pour in the water and mix well. Reduce the heat to medium-low and simmer for 5–7 minutes, until the liquid has reduced and the filling is thick and flavorful. Remove from the heat and let the filling cool for about 5 minutes. ​

    Lay each tortilla half on a flat surface. Spoon about ⅓ cup of the beef filling onto one side of each tortilla half. Top with a mixture of the mozzarella and cheddar cheese. Fold each tortilla into a triangle pocket, pressing gently to hold its shape. ​

    Brush both sides of each tortilla pocket with the melted butter. Arrange the tortilla pockets in a large oven-safe pan or skillet in a single layer. Bake for ​15–18 minutes, carefully flipping the pockets halfway through, until both sides are golden brown and crispy and the cheese is fully melted.​
