Make the Vanilla Pudding
- StepIn a medium saucepan, whisk together the arrowroot powder, sugar, and salt.
- StepSlowly whisk in the milk until smooth.
- StepIn a separate bowl, lightly beat the egg yolks. Slowly pour about ½ cup of the warm milk mixture into the yolks, whisking constantly to temper them.
- StepPour the yolk mixture back into the saucepan with the rest of the milk mixture. Cook over medium heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens and coats the back of the spoon, about 5–7 minutes.
- StepRemove from heat and stir in the butter and vanilla paste or extract.
- StepPour the pudding into a bowl, press plastic wrap directly onto the surface to prevent a skin from forming, and refrigerate for at least 2 hours, or until fully chilled.
Prepare the Fruit & Syrup
- StepWhile the pudding chills, toss the sliced strawberries with 1 tablespoon of sugar and a squeeze of lemon juice. Let them macerate for 15–30 minutes until they release their juices.
- StepSlice the banana just before assembling to prevent browning.
- StepWarm the strawberry jam in a small saucepan or microwave for a few seconds until it becomes pourable. If needed, thin it slightly with a teaspoon of water or lemon juice.
Make the Chantilly Cream
- StepIn a chilled bowl, beat the heavy cream, sugar, and vanilla paste with a hand mixer (or by hand with a whisk) until soft peaks form.
- StepRefrigerate until ready to use.
Assemble the Dessert
- StepSpoon a layer of vanilla pudding into serving glasses or bowls.
- StepAdd a layer of sliced bananas and macerated strawberries.
- StepDrizzle with the warmed strawberry jam syrup.
- StepSprinkle with crushed graham crackers for crunch.
- StepTop with a generous spoonful of Chantilly cream.
- StepGarnish with fresh mint leaves.
