Campsite Tiramisu

Layers of coffee-soaked ladyfingers and a rich, creamy filling made with local mascarpone, sour cream and whipping cream come together in this easy individual tiramisu. Finished with cocoa powder, it’s a simple make-ahead dessert for sharing. Recipe by Chef Michelle Rabin.   1. Step
    Place the coffee in a shallow dish.
  2. Step
    Place the mascarpone, sour cream, sugar and vanilla in a large bowl and beat until light and fluffy, about 2 minutes.
  3. Step
    In a separate bowl, whip the cream to stiff peaks.
  4. Step
    Gently fold the whipped cream into the mascarpone mixture.
  5. Step
    Dip one ladyfinger into the coffee, a few seconds per side. Break it in half and place in the bottom of a jar. Repeat with remaining jars.
  6. Step
    Spoon about ¼ cup of the mascarpone mixture over the ladyfingers in each jar. Repeat with remaining lady fingers and mascarpone mixture.
  7. Step
    Using a small sieve, dust cocoa powder over each one.
  8. Step
    Refrigerate for 30 minutes.
