  1. Step
    Preheat oven to 350˚F. Line a 9x13” baking pan with parchment paper.
  2. Step
    Begin by making the crust. In a large bowl, whisk together flour, brown sugar, cinnamon and salt. Add local butter and break into flour mixture. Press into prepared pan with a spoon and set aside.

    In a new large bowl, beat local cream cheese and ¾ cup sugar until light and fluffy. Crack eggs and pour in separately, beating continuously until combined. Add vanilla, salt and beat until airy. Pour filling over crust and smoothen with a spatula.

    In a small bowl, toss together apples, 2 tablespoons sugar and cinnamon. Set aside.
  5. Step
    In a medium bowl, whisk together brown sugar, sugar, flour and apples, then cut in butter with a fork or pastry cutter. Scatter apple crumble over the cheesecake.
  6. Step
    Bake until slightly jiggly in the centre, about 50 minutes. Let cool completely, then refrigerate for at least 2 hours or until fully set.
  7. Step
    Once ready, slice into squares and drizzle caramel.
