Instructions

Step 1

Preheat oven to 350ºF (180ºC). Line a 12-cup muffin tin.

Step 2

In a bowl, whisk together flour, baking powder, baking soda and salt.

Step 3

In a large bowl, whisk together sugar and butter until smooth. Add eggs one at a time and whisk well after each addition. Whisk in vanilla. Stir in half of the flour mixture. Add buttermilk and stir to combine. Stir in remaining flour mixture until just combined.

Step 4

Divide batter among prepared muffin tins. Bake for about 15 minutes or until tester inserted in centre comes out clean. Let cool completely before frosting.

Step 5

Frosting: In a bowl, using an electric mixer, beat butter, vanilla, and salt for about 3 minutes until almost white and smooth. Beat in half of the sugar; add cream. Then beat in remaining icing sugar and continue mixing for about 2 minutes or until fluffy and very smooth. Beat in food colouring to desired colour. Spread or pipe icing over tops of cupcakes.

Vanilla Cream Cheese Frosting Variation:

Omit butter and substitute 1/2 cup (125 mL) cream cheese, softened with 3 tbsp (45 mL) unsalted butter, softened.

Chef’s Tip

If you want more icing to create intricate flowers, you will need to double the frosting recipe.
