Truffle Lobster Bisque Shooters
These decadent shooters are topped with shaved local aged cheddar, that melts in your mouth upon serving. Bottoms up!

- StepIn a pot over medium heat, melt 2 tbsp butter. Add the shallot and cook for 2–3 minutes, until softened.
- StepWhisk in the flour and cook for 1–2 minutes, stirring constantly, until the mixture forms a smooth paste.
- StepSlowly whisk in the stock, followed by the whipping cream and milk. Add the salt and pepper. Bring to a gentle simmer and cook for 4–5 minutes, stirring occasionally, until slightly thickened.
- StepStir in the lobster meat and remaining 2 tbsp butter. Cook for 2–3 minutes, until the lobster is warmed through and the bisque is creamy. Taste and adjust seasoning as needed.
- StepPour the bisque into shooter glasses. Top each with shaved aged white cheddar and chopped chives. Serve warm.
