Truffle Lobster Bisque Shooters

These decadent shooters are topped with shaved local black truffle gouda, that melts in your mouth upon serving. Bottoms up!

  1. Step
    In a pot, add 2 tbsp butter, lobster, salt and pepper until cooked. Remove lobster from the pot.
  2. Step
    Slowly whisk in lobster stock, heavy cream and milk. Simmer for 4 minutes. Add lobster back into the pot, add salt to taste and 2 tbsp butter. Continue cooking until creamy and thick, about 2-5 minutes.
  3. Step
    Pour bisque into shooter glasses. Shave black truffle gouda on top of each shooter and garnish with chives and serve
