Truffle Lobster Bisque Shooters

These decadent shooters are topped with shaved local aged cheddar, that melts in your mouth upon serving. Bottoms up!

  1. Step
    In a pot over medium heat, melt 2 tbsp butter. Add the shallot and cook for 2–3 minutes, until softened.
  2. Step
    Whisk in the flour and cook for 1–2 minutes, stirring constantly, until the mixture forms a smooth paste.
  3. Step
    Slowly whisk in the stock, followed by the whipping cream and milk. Add the salt and pepper. Bring to a gentle simmer and cook for 4–5 minutes, stirring occasionally, until slightly thickened.
  4. Step
    Stir in the lobster meat and remaining 2 tbsp butter. Cook for 2–3 minutes, until the lobster is warmed through and the bisque is creamy. Taste and adjust seasoning as needed.
  5. Step
    Pour the bisque into shooter glasses. Top each with shaved aged white cheddar and chopped chives. Serve warm.
