Strawberry Chocolate Cake

This chocolate strawberry layer cake combines rich chocolate cake, fresh strawberries and light cream cheese whipped frosting for a bakery-worthy dessert. Made with butter, milk, cream cheese and cream from Ontario, it's the perfect cake for birthdays, celebrations and weekend baking.

Instructions

  1. Step
    Preheat the oven to 350°F (175°C). Grease and line two 8-inch (20 cm) round cake pans with parchment paper. ​

    In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda and salt. ​
  3. Step
    In a separate bowl, whisk together the melted butter, milk, eggs and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. Slowly stir in the hot coffee until the batter is smooth. ​

    Divide the batter evenly between the prepared cake pans. Bake for 30–35 minutes, or until a toothpick inserted into the centre comes out clean. Cool in the pans for 10 minutes before transferring to a wire rack to cool completely. ​

    While the cakes cool, combine the diced strawberries, granulated sugar and lemon juice in a bowl. Let stand for 15–20 minutes until the berries release their juices. ​

    In a large bowl, beat the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla, then beat in the heavy cream until light and fluffy. ​

    Place one cake layer on a serving plate. Spread a layer of frosting over the cake, then spoon the strawberry filling evenly over the frosting. Top with the second cake layer. ​
  8. Step
    Frost the top and sides of the cake with the remaining frosting. ​
  9. Step
    Decorate with the halved fresh strawberries and shaved dark chocolate before serving. ​
