Instructions

  1. Step
In a small saucepan, melt the butter over medium heat. Continue cooking, swirling occasionally, until golden brown with a nutty aroma. Remove from the heat.
  2. Step
While the browned butter is still warm, stir in the white miso paste and freshly grated ginger until well combined.
  3. Step
Transfer to a mixing bowl and place over an ice bath, making sure no water gets into the butter. Stir occasionally until the mixture begins to thicken and becomes soft but no longer liquid.
  4. Step
Using a hand mixer or whisk, whip until light, creamy, and fluffy.
  5. Step
Transfer to a serving bowl and spread over warm toast or freshly baked bread. Alternatively, use it to finish pasta, roasted vegetables, or grilled meats.

TIP

Watch the butter carefully as it browns to prevent burning. Make sure the butter has cooled and thickened before whipping to achieve a fluffy consistency. White miso adds natural saltiness, so additional salt is usually unnecessary. Store in an airtight container in the refrigerator for up to 5 days. Allow to soften before serving.
