    In a small bowl, combine cottage cheese, cinnamon, and honey.

    Slice bread in half, part way to create a pocket.
  3. Step
    Fill the pocket with apples and cream cheese mixture. Be sure to reserve ½ cup of cottage cheese mixture for garnish.

    In a large bowl, whisk eggs and milk.
  5. Step
    Dip the bread in the egg and milk mixture.
  6. Step
    In a large pan on medium heat, melt ½ tbsp of butter, fry bread slices, about 3-4 minutes per each side.

    To garnish, top each stuffed French toast with ¼ cup of the cottage cheese mixture and berries. Serve with maple syrup.
