- StepIn a small bowl, combine cottage cheese, cinnamon, and honey.
- StepSlice bread in half, part way to create a pocket.
- StepFill the pocket with apples and cottage cheese mixture. Be sure to reserve ½ cup of cottage cheese mixture for garnish.
- StepIn a large bowl, whisk eggs and milk.
- StepDip the bread in the egg and milk mixture.
- StepIn a large pan on medium heat, melt ½ tbsp of butter, fry bread slices, about 3-4 minutes per each side.
- StepTo garnish, top each stuffed French toast with ¼ cup of the cottage cheese mixture and berries. Serve with maple syrup.
