Gooey Smoked Gouda Stuffed Chicken

    Preheat the oven to 375°F.

    Butterfly the chicken breasts and lay them between two pieces of parchment paper. Using a tenderizer or rolling pin, flatten the chicken to about ¼-inch thickness.

    Divide the shredded smoked gouda between the chicken breasts. Roll each chicken breast around the cheese and place seam side down in a baking dish.

    Pour the cream over the chicken and season with 1 tsp salt and 1 tsp pepper. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.

    While the chicken bakes, melt the butter in a large skillet over medium heat. Add the mushrooms and season with the remaining salt and pepper. Sauté until the mushrooms are golden brown.
