Gooey Smoked Gouda Stuffed Chicken

- StepPreheat the oven to 375°F.
- StepButterfly the chicken breasts and lay them between two pieces of parchment paper. Using a tenderizer or rolling pin, flatten the chicken to about ¼-inch thickness.
- StepDivide the shredded smoked gouda between the chicken breasts. Roll each chicken breast around the cheese and place seam side down in a baking dish.
- StepPour the cream over the chicken and season with 1 tsp salt and 1 tsp pepper. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
- StepWhile the chicken bakes, melt the butter in a large skillet over medium heat. Add the mushrooms and season with the remaining salt and pepper. Sauté until the mushrooms are golden brown.
- StepAdd the balsamic glaze to the skillet and stir until the mushrooms are lightly coated and the sauce is warmed through.
- StepSpoon the balsamic mushrooms over the baked stuffed chicken. Garnish with chopped parsley and serve warm.
