Easy Fresh Lemon Cheesecake Mousse

Calling all lemon lovers, this recipe is for you! An elegant sweet treat that can be made ahead of time. Light and fluffy lemon mousse made with cream and cream cheese made right here in Ontario.

    Preheat the oven to 350F
  2. Step
    In a bowl, mix graham cracker crumbs, sugar and butter until combined
  3. Step
    On a prepared baking tray add graham cracker mix and press onto the baking tray evenly. Bake for 8 minutes. Remove from the oven and cool.
  4. Step
    In a bowl, add lemon curd, cream cheese, and milk and mix with a hand mixer until smooth, about 4-5 minutes and set aside.
  5. Step
    In each serving glass, crumble graham cracker crust into the bottom, covering evenly.
  6. Step
    Spoon cream cheese lemon curd mixture on top of the crust
  7. Step
    Garnish with raspberries, mint leaves and lemon slices and serve
