Creamy Cheddar Grits with Spiced Shrimp

A classic soulful Southern dish filled with tons of locally made dairy and cheddar made in Ontario.

  1. Step
    In a medium saucepan, bring the local milk, water, ½ cup whipping cream, and 1 tsp salt to a gentle simmer over medium heat.

    Slowly whisk in the grits. Reduce the heat to low and cook, stirring often, until thick and creamy, following the package timing as a guide. If the grits become too thick before they are tender, add a splash of milk, or cream.

    Stir in 1 tbsp butter and the shredded cheddar until melted and smooth. Season with pepper and additional salt to taste. Cover and keep warm.

    Pat the shrimp dry and season with Creole seasoning, the remaining ½ tsp salt, and pepper.

    In a frying pan over medium heat, melt the remaining 1 tbsp butter. Add the garlic and cook for 30 seconds, until fragrant.

    Add the shrimp and cook for 2–3 minutes per side, or until pink and cooked through.
  7. Step
    Stir in the remaining ½ cup whipping cream and 1 tbsp lemon juice. Cook for 1–2 minutes, just until the sauce is warmed through and slightly thickened.
  8. Step
    Spoon the cheddar grits into serving bowls. Top with the spiced shrimp and pan sauce. Garnish with parsley and the remaining lemon juice, if desired. Serve warm.
