Now that Spring is here, bring a different bouquet of flowers for the ones you love, a sweet treat that looks and smells almost better than flowers! Made with delicious Ontario Dairy, this is a great recipe and activity to get the kids involved in the kitchen, and to get your creative juices flowing. We doubt that you’ll be able to resist the delicious Cream Cheese frosting on these beautiful cupcakes!

Instructions

  1. Step
    Preheat oven to 350ºF (180ºC). Line a 12-cup muffin tin.
  2. Step
    In a bowl, whisk together flour, baking powder, baking soda and salt.
  3. Step
    In a large bowl, whisk together sugar and butter until smooth. Add eggs one at a time and whisk well after each addition. Whisk in vanilla. Stir in half of the flour mixture. Add buttermilk and stir to combine. Stir in remaining flour mixture until just combined.
  4. Step
    Divide batter among prepared muffin tins. Bake for about 15 minutes or until tester inserted in centre comes out clean. Let cool completely before frosting.
  5. Step
    In a bowl, using an electric mixer, beat butter, vanilla, and salt for about 3 minutes until almost white and smooth. Beat in half of the sugar; add cream. Then beat in remaining icing sugar and continue mixing for about 2 minutes or until fluffy and very smooth. Beat in food colouring to desired colour. Spread or pipe icing over tops of cupcakes.

    Omit butter and substitute 1/2 cup (125 mL) cream cheese, softened with 3 tbsp (45 mL) unsalted butter, softened.

DIRECTIONS

  1. Step
    Cut your piece of Styrofoam so that it fits snug in the flowerpot you’re using, ensuring it’s deep enough so that it’s not sticking out over the top of the flowerpot.
  2. Step
    Take your skewers and gently pierce them through the bottom of each cupcake, then place them into the flowerpot, sticking them into the Styrofoam.
  3. Step
    Place the botanicals and moss of your choosing into the pot, covering any visible Styrofoam. Gift it to someone special and enjoy!
