  1. Step
    Make your whipped feta by combining the cheese and cream in a food processor. Simply blitz for a minute until evenly incorporated, light, and fluffy. That's it! Transfer to your serving bowl (or to a piping bag fitted with a star tip for a fancy presentation).

    Make your eggplant relish by heating the oil in a large pot, then adding the eggplant. Cook until golden then remove with a slotted spoon. Add the onions, carrots, garlic, and chilis. Cook for 3-4 minutes, then add the tomatoes, spices, salt, and sugar.
  3. Step
    Cook and reduce for another 3-4 minutes. Finish with the vinegar and herbs, then take off the heat. Allow to cool completely before serving, this can be done a day or two in advance.

    Serve the whipped feta with crusty bread and a side of the eggplant relish for spooning on. Enjoy!
