Delicious, fast and easy to make, this creamy dish is guaranteed to become a regular addition to your meal routine.
Ingredients
- 1/4 cup (60 mL) Canadian butter
- 1 pkg (500 g) shelf stable or refrigerated potato gnocchi
- 1 lemon
- 1 cup (250 mL) Canadian 35% whipping cream
- 1/2 cup (125 mL) fresh, finely-shredded Canadian Parmesan cheese
- 2 tbsp (30 mL) chopped, fresh basil or parsley
- Fresh black pepper, to taste
Instructions
- StepIn a large, non-stick skillet, melt butter over medium-high heat. Add gnocchi and pan fry, stirring for about 3 minutes or until gnocchi are starting to plump up and become golden.
- StepMeanwhile, using a vegetable peeler, remove 2 long strips (about 2 inches/5 cm each) of the zest from the lemon. Cut lemon in half and juice enough of the lemon to measure out 2 tbsp (30 mL).
- StepPour cream and lemon zest into skillet and bring to a boil. Cook, stirring, for about 3 minutes or until starting to thicken. Stir in cheese, lemon juice and basil. Cook for about 1 minute or until gnocchi are tender throughout and sauce coats gnocchi. Remove from heat and add fresh pepper to serve. Sprinkle with additional cheese, if desired.
