    In a bowl, whisk together flour, baking powder and salt.

    In a large bowl, using a handheld electric mixer beat together butter and icing sugar until smooth. Beat in egg and vanilla until smooth. Add flour mixture and stir until well combined. Gather dough with hands and divide dough in half. Roll each dough half into a 9-inch (23 cm) long log. Wrap with plastic wrap and refrigerate for at least 1 hour or until firm.

    Preheat oven to 350ºF (180ºC). Line 2 baking sheets with parchment paper.
  4. Step
    Slice 1 log at a time into 1/2 inch (1 cm) thick slices and place on prepared pans. Bake for 10 to 12 minutes or until light golden. Let cool completely.

Notes

Crushed Pretzel Variation:

Stir in 2/3 cup (150 mL) crushed pretzels into dough before shaping.

Mocha Variation:

Reduce flour to 2 cups (500 mL) and add 1/4 cup (60 mL) unsweetened cocoa powder. Increase vanilla to 2 tsp (10 mL) and stir in 2 tsp (10 mL) instant coffee until dissolved before adding to dough.

Cinnamon Hazelnut Variation:

Add 2 tsp (10 mL) ground cinnamon to flour mixture. Stir in 2/3 cup (150 mL) chopped hazelnuts into dough before shaping.
