Mozzarella is essential in any lasagna recipe. The smooth, sweet flavour and the meltiness of the local Ontario cheese makes for a deliciously tasty dinner.

- StepMix the chopped salami with the grated parmesan and the basil thorn by hand into little pieces.
- StepSet all the ingredients in front of you and prepare a baking (Lasagna) dish by buttering the bottom and the sides well.
- StepStart the layering by spreading tomato sauce on the bottom and the first layer of pasta sheets, overlapping by 1 inch is best.
- StepPour some tomato sauce and spread well, sprinkle the parmesan basil mixture all-over, then add the shredded mozzarella, a few pinches of ricotta and the cubed mozzarella, top with another layer of pasta and repeat for at least five layers. The top should be very cheesy.
- StepWrap with aluminum foil and bake for 1 hour or more at 400F. Remove the foil when only 10 minutes remain - this is to allow enough time for the mozzarella to fully melt and become golden.
- StepRemove from the oven and rest for at least 20 minutes before serving!
