    Place a loaf pan in the freezer.

    In a blender, add cottage cheese, honey and vanilla. Blend until smooth.

    Add 1 ½ cup of frozen berries and pulse a few times so they’re incorporated but not completely blended.

    Remove the loaf pan from the freezer and pour the cottage cheese mixture in. Top with the remaining berries, and freeze for 4 hours or overnight.

    Once ready to serve, let rest at room temperature for 5 to 10 minutes, until easy to scoop.
