Witches Brew Dip

- StepIn a medium pot over medium heat, combine the water, butter, and salt. Bring to a gentle boil, then remove from heat. Stir in the flour with a wooden spoon until a sticky dough forms. Return the pot to low heat and stir constantly for 2–3 minutes, until a thin film develops on the bottom and the dough pulls into a ball.
- StepTransfer dough to a mixing bowl. Beat with a hand mixer or stand mixer for 2–3 minutes to release steam and cool slightly. Add eggs one at a time, mixing until the dough becomes glossy and pipeable. Spoon dough into a piping bag fitted with a large open star tip.
- StepHeat 2–3 inches (5–7 cm) of oil in a deep pot to 190°C (375°F). Pipe strips of dough (about 10–12 cm long) directly into the hot oil, snipping with kitchen scissors. Fry in batches, turning occasionally, for 3–4 minutes or until golden and crisp. Drain on paper towels and roll in granulated sugar while warm.
- StepIn a blender or food processor, combine avocado, Greek yogurt, powdered sugar, and lime juice. Blend until smooth and light green in colour. Chill if desired before serving.
