Shallot Tart with Shaved Dark Chocolate

Trust us on this one–you’ve got to try it! Made with local cheese, this tart brings together the bitterness of the chocolate and the sharpness of the shallots in a delicious cheesy harmony paired on top of a buttery puffed pastry.

Ingredients

  • 3 tbsp local butter
  • 1 cup shallots, peeled and halved lengthwise
  • 1 package of frozen puff pastry, thawed
  • 2 ½ cups local Swiss-style or mozzarella cheese, shredded
  • 2 tsp fresh thyme or 1/2 tsp dried thyme
  • ¼ cup local 10% cream
  • 2 tbsp egg wash
  • Salt and pepper, to taste
  • 2-3 tbsp shaved dark chocolate

Instructions

  1. Step
    Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Step
    In a nonstick pan over medium-low heat, melt the butter. Add the shallots and cook carefully, turning occasionally, until softened and caramelized. Remove from the pan and set aside.

    Roll the puff pastry into a rectangle and place it on the prepared baking sheet. Fold the edges of the pastry slightly inward to create a rustic border.

    In a small bowl, mix the cheese with the cream. Spread the cheese mixture over the pastry, leaving the border uncovered. Arrange the caramelized shallots on top and sprinkle with thyme. Season lightly with salt and pepper.
  5. Step
    Brush the pastry edges with egg wash. Bake for 15–20 minutes, or until the pastry is puffed and golden and the cheese is melted.

    Finish with shaved dark chocolate just before serving. Serve warm.
