- StepIn a large bowl, whisk together eggs, whole milk, half and half, brown sugar, vanilla extract, and ground nutmeg until well combined.
- StepSlice the croissants in half horizontally. You can also cut them into quarters for bite-sized pieces if you prefer.
- StepPreheat a large skillet or griddle over medium heat and add butter. Dip each croissant half into the custard mixture, allowing it to soak for a few seconds on each side. Be careful not to soak them too long to avoid sogginess.
- StepOnce the skillet is hot, place the soaked croissant halves in the pan, cut side down. Cook for about 3-4 minutes until golden brown, then flip and cook for another 2-3 minutes on the other side. Repeat with the remaining croissants, adding more butter to the pan as needed.
- StepIn a medium bowl, mix heavy cream with vanilla extract and sugar. Adjust the sweetness to taste.
