    In a large bowl, whisk together eggs, whole milk, half and half, brown sugar, vanilla extract, and ground nutmeg until well combined.

    Slice the croissants in half horizontally. You can also cut them into quarters for bite-sized pieces if you prefer.

    Preheat a large skillet or griddle over medium heat and add butter. Dip each croissant half into the custard mixture, allowing it to soak for a few seconds on each side. Be careful not to soak them too long to avoid sogginess.

    Once the skillet is hot, place the soaked croissant halves in the pan, cut side down. Cook for about 3-4 minutes until golden brown, then flip and cook for another 2-3 minutes on the other side. Repeat with the remaining croissants, adding more butter to the pan as needed.

    In a medium bowl, mix heavy cream with vanilla extract and sugar. Adjust the sweetness to taste.
