You'll want to add this rich, creamy recipe to your weekly meal rotation! This recipe takes less than 30 minutes and is full of delicious rich flavours. Inspired by the iconic Milk Calendar, this mouthwatering recipe was created by @katherinewants (Chef Randy Feltis and Katherine Moore).
Ingredients
- 3 chicken breasts 1 inch thick
- 1 kosher salt
- 1 black pepper
- 2 tablespoons EVOO
- 3 tablespoons local Ontario butter
- 1 shallot, sliced
- 1 clove garlic, sliced
- 1/4 cup sun dried tomatoes, sliced
- 3/4 cup local Ontario heavy cream
- 1.5 tablespoons local Ontario creme fraiche (sour cream)
- 1.5 cups baby spinach
- 1/4 cup local Ontario Parmesan, grated
Instructions
- StepSeason and sear the chicken in a medium, high saucepan in olive oil.
- StepRoast at 400F for 4 minutes and flip when caramelized and roast for another 4-6 minutes. Remove when external temperature is 150F degrees.
- StepAdd butter, shallots and garlic to the pan. Deglaze with heavy cream and creme fraiche. Toss in sun dried tomatoes and spinach.
- StepBring the chicken back to the party and top with Parmesan.
- StepBake until golden and enjoy!
