Ingredients

  • 3 chicken breasts 1 inch thick
  • 1 kosher salt
  • 1 black pepper
  • 2 tablespoons EVOO
  • 3 tablespoons local Ontario butter
  • 1 shallot, sliced
  • 1 clove garlic, sliced
  • 1/4 cup sun dried tomatoes, sliced
  • 3/4 cup local Ontario heavy cream
  • 1.5 tablespoons local Ontario creme fraiche (sour cream)
  • 1.5 cups baby spinach
  • 1/4 cup local Ontario Parmesan, grated

Instructions

  1. Step
    Season and sear the chicken in a medium, high saucepan in olive oil.
  2. Step
    Roast at 400F for 4 minutes and flip when caramelized and roast for another 4-6 minutes. Remove when external temperature is 150F degrees.
  3. Step
    Add butter, shallots and garlic to the pan. Deglaze with heavy cream and creme fraiche. Toss in sun dried tomatoes and spinach.
  4. Step
    Bring the chicken back to the party and top with Parmesan.
  5. Step
    Bake until golden and enjoy!
