Cottage Cheese Cake

This creamy, light cheesecake is smooth, rich, and made with protein-rich cottage cheese made right here in Ontario. A wholesome twist on a classic dessert.

    Preheat oven to 350°F (175°C). Line two small ramekins or oven-safe bowls with parchment paper or lightly grease them.

    In a blender or food processor, combine cottage cheese, Greek yogurt, egg, vanilla protein powder, and vanilla extract. Blend until the mixture is smooth and creamy with no lumps.
  3. Step
    Divide the batter evenly between the prepared ramekins. Bake for 25–30 minutes, or until the centers are set and the edges are lightly golden.
  4. Step
    Top each cake with fresh blueberries while warm or after cooling.
  5. Step
    Allow the cakes to cool at room temperature, then refrigerate for at least 1–2 hours for a firm, cheesecake-like texture.
