Burrata Caprese Sandwich

Crunchy, creamy, and oh so delicious!  We grilled a burrata caprese panini and let the high-quality burrata from Ontario dairy farmers do what it does best – steal the show.

Make the Tomato Confit

  1. Step
    Preheat oven to 375°F (190°C).
  2. Step
    In a small baking dish, combine cherry tomatoes, garlic cloves, butter, rosemary, salt.
  3. Step
    Roast for 20–25 minutes, or until tomatoes are soft and blistered. Let cool slightly.

Toast the Bread

  1. Step
    Lightly toast slices of Baguette with butter using a brush add the butter and using a pan toast the baggutes until crisp and golden.

Assemble the Toast

  1. Step
    Spread a generous layer of basil pesto on the toast.
  2. Step
    Add a handful of arugula.
  3. Step
    Tear open the burrata and place on top.
  4. Step
    Spoon over the roasted tomato confit with some of the garlic and infused oil.
  5. Step
    Sprinkle chili oil.
  6. Step
    Drizzle with fig glaze for a sweet finish.

Serving Tips

  1. Step
    Serve immediately while the burrata is still creamy and the bread warm.
