- StepIn a small bowl, gently toss blueberries with honey and lemon juice. Let sit for 5 minutes so juices begin to develop.
- StepSpread butter evenly on one side of both slices of bread. This will create a beautifully crisp, golden exterior when grilled.
- StepOn the unbuttered side of one slice, layer half of the shredded white cheddar and mozzarella. Spoon the blueberry mixture evenly over the cheese. Top with the remaining shredded cheeses and then the second slice of bread, buttered side out.
- StepHeat a non-stick skillet over medium-low heat. Place the sandwich in the pan and cook 2–3 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is fully melted.
