Instructions

  1. Step
    Preheat the oven to 400°F (200°C). Cut the puff pastry into 6 rectangles. Use a spoon to create a well in the middle, leaving ¼-inch of pastry around the edges. Use a fork to poke holes in the centre of the well to help it bake evenly.

    In a bowl, combine apple slices with lemon juice, thyme and salt. Set aside.
  3. Step
    Spread 2 tablespoons of the mascarpone cheese onto the puff pastry, keeping ¼-inch away from the edge.
  4. Step
    Divide the cheddar cheese evenly between the puff pastry rectangles, then top with 4 slices of apples. Spread ½ tablespoon of fig spread over apples.
  5. Step
    Brush the edges of tarts with egg yolk. Bake for 20 minutes.

Garnish

  1. Step
    Remove from the oven and garnish with fresh thyme.
