Aged Cheddar & Apple Tart
A deliciously sweet and savoury tart with caramelized apples, fig spread and bold cheddar—perfect for any occasion, from dinner parties to a cozy night in.

Instructions
- StepPreheat the oven to 400°F (200°C). Cut the puff pastry into 6 rectangles. Use a spoon to create a well in the middle, leaving ¼-inch of pastry around the edges. Use a fork to poke holes in the centre of the well to help it bake evenly.
- StepIn a bowl, combine apple slices with lemon juice, thyme and salt. Set aside.
- StepSpread 2 tablespoons of the mascarpone cheese onto the puff pastry, keeping ¼-inch away from the edge.
- StepDivide the cheddar cheese evenly between the puff pastry rectangles, then top with 4 slices of apples. Spread ½ tablespoon of fig spread over apples.
- StepBrush the edges of tarts with egg yolk. Bake for 20 minutes.
Garnish
- StepRemove from the oven and garnish with fresh thyme.
