Instructions

Meatballs

  1. Step
    In a large bowl, combine all meatball ingredients, except the butter. Divide the mixture equally and form 24 meatballs.
  2. Step
    In a pan over medium heat, melt the butter, then add the meatballs and cook until golden on all sides and the internal temperature reaches 160°F (70°C).
  3. Step
    Remove the meatballs from the pan and set aside.

Sauce

  1. Step
    In the same pan, melt butter. Add mushrooms and onions and sauté until translucent. Add flour and cook for 1 minute. Reduce heat and slowly add milk, stirring constantly until fully incorporated.
  2. Step
    Increase heat to medium, return the meatballs to the pan, and continue to simmer until the sauce thickens and coats the back of a spoon, stirring frequently. Add the parmesan cheese and thyme and continue to simmer for 5 minutes. Set aside.

Mashed Potatoes

  1. Step
    In a pot, boil the potatoes for 25 minutes or until they are fork-tender.
  2. Step
    Strain the potatoes and return them to the pot. Mash the potatoes.
  3. Step
    Add the milk, cream and butter mixture to the potatoes and continue to mash until smooth. Stir in the parsley.

Assembly

  1. Step
    In individual bowls, portion out mash and add in 5 - 6 meatballs, top with sauce and garnish

Milk can be used to tenderize meats, add creaminess to sauces and soups, and make baked goods like breads, cakes and muffins more moist and tender.
