There’s nothing better than hot meatballs covered in a creamy sauce, served over buttery mashed potatoes during the autumn chill.

Instructions
Meatballs
- StepIn a large bowl, combine all meatball ingredients, except the butter. Divide the mixture equally and form 24 meatballs.
- StepIn a pan over medium heat, melt the butter, then add the meatballs and cook until golden on all sides and the internal temperature reaches 160°F (70°C).
- StepRemove the meatballs from the pan and set aside.
Sauce
- StepIn the same pan, melt butter. Add mushrooms and onions and sauté until translucent. Add flour and cook for 1 minute. Reduce heat and slowly add milk, stirring constantly until fully incorporated.
- StepIncrease heat to medium, return the meatballs to the pan, and continue to simmer until the sauce thickens and coats the back of a spoon, stirring frequently. Add the parmesan cheese and thyme and continue to simmer for 5 minutes. Set aside.
Mashed Potatoes
- StepIn a pot, boil the potatoes for 25 minutes or until they are fork-tender.
- StepStrain the potatoes and return them to the pot. Mash the potatoes.
- StepAdd the milk, cream and butter mixture to the potatoes and continue to mash until smooth. Stir in the parsley.
Assembly
- StepIn individual bowls, portion out mash and add in 5 - 6 meatballs, top with sauce and garnish
