Creamy Ontario feta cheese, cool watermelon and grilled peppers are bathed in a fragrant spiced oil for a great taste of summer flavours.

Instructions

Step 1

Preheat grill to medium-high and grease grates well. Toss shishitos with 1 tbsp (15 mL) olive oil. Grill for 5 to 7 minutes or until tender and blistered. 

Step 2

Meanwhile, in a small pot set over medium heat, warm remaining olive oil with coriander seeds, pepper and oregano for 2 to 4 minutes or until fragrant. 

Step 3

On a large platter, arrange watermelon and grilled shishitos. Top with feta. Drizzle oil over top, then sprinkle with flaked salt.

Cook’s Tip

Shishitos are bite-size bright green peppers. Most of them are mild, but about 1 in 10 can be spicy! Padron peppers are similar. If neither are available, substitute mini sweet peppers.
