These single-serve pizzas are designed for summer evening backyard meals. Fresh herbs and Canadian cheese bring all the flavours together and, even better, this recipe is the perfect canvas for experimenting with many leftover ingredients you may have in your fridge!
Garlic Cream Sauce: In a saucepan, melt butter over medium-low heat. Add garlic and cook for 1 minute to soften. Stir in flour and cook for 1 minute. Whisk in cream and cook, whisking for about 3 minutes or until thickened. Remove from heat and stir in parsley, salt and pepper.
Preheat grill to medium heat. Spray lightly with cooking spray.
Spread Garlic Cream Sauce on each naan. Top with chicken and sprinkle with mozzarella and feta cheeses. Transfer naan pizzas to grill; close lid for about 5 minutes or until naan is slightly crisp and golden and cheeses are melted. Sprinkle with parsley and hot pepper flakes (if using) before serving.
You can also make this pizza in the oven! Preheat to 400°F (200°C) and bake on the middle rack for 10-12 minutes or until the crust is browned and the cheese is bubbling and golden.
