This creamy casserole recipe will turn your leftovers into a delicious feast!
Preheat the oven to 350˚F.
In a large pot, melt butter. Add onion, garlic and carrots. Cook until onions are translucent. Add the mushrooms, broccoli and green beans. Mix well. Cover and steam until softened. Add the shredded turkey and mix together. Turn off the heat and set aside.
In a small pot, begin making the sauce. Melt butter on medium heat. Pour heavy cream and add spices. Mix and allow sauce to begin simmering.
Add mozzarella cheese into pot and mix until combined. Let the sauce simmer until thickened, about five minutes. Once thickened, remove from heat, set aside.
Transfer the vegetable mixture in a casserole dish. Spread vegetables out evenly. Pour thickened sauce over vegetables. Sprinkle cheddar cheese over top. Bake for 20 minutes until golden brown. Once ready, take out the oven and serve.
