We sent Mystery Boxes to four home-grown chefs filled with local Ontario dairy ingredients and other Ontario grown products. The challenge? To create a recipe using a few of the mystery ingredients. What did @heyitshuy_, the ultimate winner bring to the table? Butter-seared scallops with golden apple sauce using Ontario milk, butter, and locally grown potatoes.

Mashed Potatoes

Butter-Seared Scallops

Step 1: Mashed Potatoes

Peeled and slice each potato into wedges. In a small pot, bring water to a boil and transfer potatoes to the pot. Cover and reduce to medium heat. Cook for about 10 – 12 minutes until soft. Strain water, add in milk, butter, salt & pepper and mash!

Step 2: Golden Apple Sauce

In a small pot, heat avocado oil. Add sugar. Let it caramelize (1 min). Add in diced apples, mix. Add apple cider, bring to boil. Add remainder of spices and soy sauce. Reduce heat and simmer until the sauce is slightly thickened.

Step 3: Butter-Seared Scallops

Pat scallops dry, sprinkle with salt & pepper onto both sides. Heat pan with oil until smoking. Add scallops and sprinkle with salt & pepper. Sear until golden (about 30 secs), flip and immediately add butter. Lower heat to medium. Using a spoon, tilt pan to scoop and drizzle melted butter overtop of the scallops. Once both sides are seared, remove from heat and plate.
